Even our official wine tasting felt more luxurious than usual.  We tasted seven different wines and an assortment of accompanied food such as smoked salmon with wasabi caviar, rich chocolate, and apricots.  The Palmaz family sat down with us and talked us through each wine….not just the descriptions and details, but the history and reasoning behind each in particular to their family’s interests.  
Although I enjoyed each wine, my favorites were:

2007 Napa Valley Riesling (I actually hate the super sweet taste of Riesling, but this version was light and crisp)
2005 Palmaz Vineyards Estate Cabernet (not as heavy as normal Cabs)
2002 Palmaz Vineyards Estate Cabernet (rich and perfect with the chocolate)
